Ingredients
- 1 egg
- 1 tablespoon sugar
- 1 tablespoon sunflower seed oil
- 1 tablespoon anise liqueur
- 1 lemon zest (grated)
- 1 pinch salt
- 1 cup all-purpose flour
- to taste food coloring (I used red and green)
- 1 egg white (for brushing)
- to taste powdered sugar (for decorating)
Tools
- 6 cannoli mold
- 1 red food coloring
- 1 green food coloring
Steps
Prepare the shortcrust pastry
In a bowl, break the egg, add the sugar, and mix with a fork. Pour in the oil, the anise liqueur, and also add the grated lemon zest, then mix well with the fork.
Add the flour, a pinch of salt, and start kneading everything until you have a homogeneous dough. Divide the dough into two equal parts or more parts based on the number of food colorings you will use, add a bit of food coloring to each part if desired, wear disposable food gloves, and work the dough until you reach the desired color.
I used gel food coloring; I recommend this type or powder coloring and advise against liquid coloring as it would not give a good color to the dough and would make it more sticky. Wrap the pieces of dough in plastic wrap and let them rest in the fridge for about half an hour.
Take the shortcrust pastry pieces, quickly work them with a little flour, and roll them out into a thin sheet about 1/8 inch thick. Cut one part of each sheet into strips 1/2 inch wide; these will be the streamers. From the rest of the sheet, cut out the confetti, using a pastry nozzle or a bottle cap to make small round bases 1-1/8 to 1-1/4 inches in diameter.
Take the aluminum cannoli molds, wrap the strips of dough around them, sealing the ends with a bit of egg white.
Heat plenty of peanut oil and fry the confetti and streamers, removing them with a slotted spoon when they are nicely golden and crispy, and place them on a plate with absorbent paper.
Let the streamers cool, then gently remove them from the molds by squeezing them.
Finish frying the rest of the streamers and confetti.
Serve the Carnival sweets on a plate, dusted with some powdered sugar.
