- 2.2 lbs potatoes
- 2 teaspoons spicy paprika
- 2 teaspoons curry

- as needed rosemary

Steps
To prepare the Valdostana with oven-baked spiced potatoes, start with the latter. Peel the potatoes, cut them into cubes or wedges, all the same size. Wash the potatoes thoroughly under running water, then dry them well with a kitchen towel.
Place the potatoes in a bowl and season them by adding chopped oregano and rosemary, salt, paprika, curry, and finally the extra virgin olive oil. Mix the potatoes well to enhance them with the added flavors and spices.
Transfer the potatoes to a baking sheet lined with parchment paper, spread them evenly on the sheet, and bake in a preheated ventilated oven at 375°F for about 25 minutes. During the last 10 minutes of potato cooking, add the Aia Valdostana Cutlet to the sheet. Once everything is cooked, serve the hot dish at the table.
