Apple and Baileys Bundt Cake
- 3 eggs
- cup granulated sugar
- 2 cups all-purpose flour
- cup vegetable oil
- cup yogurt (lemon flavored)
- lemon zest
- to taste ground cinnamon
- 1 tbsp baking powder
- 3 apples
- to taste raisins
- 3 tbsp Baileys
APPLE AND BAILEYS BUNDT CAKE
To prepare this delicious apple and Baileys bundt cake, first soak the raisins in Baileys.
Separate the egg whites from the yolks into two bowls.
Whip the egg whites to stiff peaks.
Beat the yolks with the sugar until light and fluffy.Add the yogurt and oil, and combine them with the batter using a spatula.
Add the flour, folding it in from top to bottom with a spatula.Then add the well-beaten egg whites, lemon zest, and sifted baking powder, making sure to fold from bottom to top.
Lastly, add the cinnamon, raisins with Baileys, and 2 apples cut into cubes.
Combine everything and pour into a previously buttered and floured bundt pan.
Top with the remaining apple sliced thinly.
Bake at 270°F for 40 minutes.Check the doneness with a toothpick, as the time may vary depending on your oven.
Remove from the oven, let cool on a rack, place on a dish and dust with a bit of powdered sugar.
