BERRY CHEESECAKE
- 10.5 oz cookies
- 5.3 oz butter
- 7 oz mascarpone
- 7 oz cream cheese
- 5.3 oz sugar
- 1 egg
- lemon zest
- 2.8 oz sugar
- 2 tbsps cornstarch
- 0.85 cup water
- 1 lemon (Zest and juice)
- as needed food coloring (Yellow)
- 10.5 oz berries
Steps
Start by crumbling the cookies in the mixer with the melted butter.
Line a springform pan with parchment paper and place the crumbled cookies in it.
Press them down and refrigerate for a couple of hours.
Put the mascarpone, Philadelphia, and sugar in a bowl and mix with a whisk.
Add the egg and mix it well into the mixture.
Add the lemon zest
Pour into the pan over the cookie base and bake for about 30 minutes (time depends on your oven).
Once ready, let it cool at room temperature, then refrigerate for 5/4 hours (I usually leave it overnight).
Let’s move on to the preparation of the topping.
In a small pot, put the sugar, cornstarch, and finely grated lemon zest and mix.
Add the water, lemon zest, and juice and mix, then turn on the flame and bring to a boil.
Stir continuously and cook for 5 minutes or until the gelatin has thickened, then add a pinch of yellow food coloring.
Let it cool, then take the cheesecake from the fridge, pour the lemon topping over it, add the berries and a few mint leaves, and put it back in the fridge for a couple of hours.
After the resting time, remove it from the pan and place it on a serving plate 😋
