BRIOCHE SANDWICHES

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup butter
  • 5 eggs
  • lemon zest
  • 1 pinch salt
  • 1/2 packet baking powder
  • as needed jam (Flavor of your choice)

  • To prepare these delicious brioche sandwiches, first separate the yolks from the whites into two bowls. In another bowl, sift the flour with the baking powder and salt.

    Whisk the egg whites to stiff peaks with an electric mixer.

    Beat the yolks with the sugar until they become thick and fluffy. Add the lemon zest and incorporate the melted butter, mixing by hand with a spatula.

    Now add the previously sifted dry ingredients in several additions and finally fold in the egg whites, mixing from the bottom up to avoid deflating the mixture.

    Pour the mixture into a baking pan approximately 16×12 inches lined with parchment paper.

    Bake at 355°F for about 20-25 minutes. Do the toothpick test to make sure it’s done.

    Remove from oven and let cool.

    Cut the base in half, fill with your chosen jam, and cut into triangles. You decide the size. You can also opt for rectangle cuts instead of triangles.

    Dust generously with powdered sugar and voilà, brioche sandwiches ready to be enjoyed 😋
