The chocolate cheesecake is a no-bake dessert, very delicious and easy to make. Don’t miss out on this recipe, it’s great when you have chocolate to use up, especially after Easter. In this recipe, I used dark chocolate, but you can certainly use milk, white, chili, orange, or whichever you prefer.

For the base, you can use any open pack of cookies in the pantry, while for the filling, I used only ricotta but if you want, you can also use mascarpone or Philadelphia, but in this case, you need to add a bit of cream to make it softer and creamier.

CHOCOLATE CHEESECAKE

  • 7 oz digestive cookies
  • 1/2 cup butter
  • 3 1/2 oz chopped almonds
  • 21 oz ricotta (Alternatively 14 oz mascarpone or Philadelphia and 7 oz heavy cream)
  • 7 oz sugar
  • 7 oz dark chocolate
  • 2 tbsp heavy cream
  • to taste Chocolate shavings
  • 1/4 cup liqueur (Chocolate-flavored)

Steps

  • To make this delicious chocolate cheesecake, first grind the chosen cookies with a mixer, mix them in a bowl with the chopped almonds and the previously melted butter, and pour them into a springform pan lined with parchment paper, spreading with the help of a spoon.

    Place in the fridge and focus on preparing the filling.

    Drain the ricotta, it should be firm, dry, without drips!

    Melt the chocolate in a bain-marie until you get a fluid mixture.

    Mix ricotta and sugar together until you get a soft mixture, pour in the cooled melted chocolate and mix with a hand whisk or even a simple spoon until you get a thick, velvety mixture without lumps.

    Add the two tablespoons of cream and the liqueur and mix well.

    Pour the mixture into the pan over the cookies, level well with the back of a spoon.

    Decorate with chocolate shavings or curls.

    If you want, add a bit of cocoa and chocolate balls.

    Let rest in the fridge, in the lower, colder part, for at least 4 – 5 hours before serving!

    Place your cheesecake on a serving dish and serve 😋
