COCOA BUNDT CAKE WITH SOFT COCONUT HEART

  • 2 cups all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 3/4 cup butter
  • 1 1/4 cups sugar
  • 4 eggs
  • 7 tbsp milk
  • 1 packet vanillin
  • 1 packet baking powder for desserts
  • 1 pinch salt
  • 3.5 oz dark chocolate (Chopped or drops)
  • as needed sugar sprinkles
  • 1/2 cup fresh liquid cream
  • 1 1/3 cups grated coconut
  • 2/3 cup sugar
  • 3 egg whites
  • 2 tbsp cornstarch

  • To prepare this delicious cocoa bundt cake with a soft coconut heart, first, let’s focus on the filling.

    In a bowl, beat the egg whites until stiff, then add the sugar, coconut, cream, and cornstarch. Mix well with a whisk. Set aside.

    Now let’s prepare the batter; first, sift the cocoa and add it to the flour and the baking powder, also sifted.

    Beat the eggs with the sugar using an electric mixer, add the vanillin, and continue beating until you obtain a light and fluffy mixture.

    Then slowly incorporate the butter, previously melted in a double boiler and cooled, always beating at high speed.

    Meanwhile, preheat the oven to 350°F.

    At this point, add the sifted flour with baking powder, cocoa, and salt, alternating with the milk, always mixing, this time at low speed. It will take just a few seconds. You will get a smooth and velvety batter.

    Butter and flour a cake pan (9.5 inches in diameter) and pour half of the cocoa batter, add the previously prepared coconut filling, and cover it all with the remaining cocoa batter. Sprinkle with dark chocolate, chopped or drops, and sugar sprinkles.

    Bake at 350°F for about 40-45 minutes. Check the cooking with a toothpick; the time may vary depending on the oven.
