CREAM BUNNY COOKIES
- 2 1/3 cups all-purpose flour
- 3/4 cup potato starch
- 1 1/2 cups powdered sugar
- 1 cup butter
- 3 tbsps heavy cream
- 1 package vanillin
- 2 3/4 tsp baking powder
- 2 eggs
- as needed chocolate chips
- as needed sugar sprinkles
- 1 egg white
Cream Bunny Cookies
To prepare these adorable cream bunny cookies, first you need to start with the cream shortcrust pastry, which should rest in the refrigerator for at least 30 minutes.
In the bowl of the stand mixer, place the flour, potato starch, powdered sugar, vanillin, and baking powder.
Mix with the paddle attachment.
Add the cold butter from the refrigerator cut into small pieces.
Run the mixer at low speed until you get a sandy mixture.
Add the cream and eggs and continue to run the mixer at low speed until well combined.
Take it out of the mixer bowl and form a dough ball.
Wrap it in plastic wrap and let it rest in the fridge for 30 minutes.
After resting, you can start forming your sweet bunny cookies 🐰
With a piece of dough, form a cord and roll it on itself to make the bunny’s body.
With two other pieces of dough, form two balls, one larger for the head and one smaller for the tail, and attach them to the body using a bit of egg white as glue.
With another piece of dough, form a cord that you attach to the head; use a small knife to divide it in two almost to the base to form the ears.
Attach a chocolate chip on the head to form the eye and decorate the body with sugar sprinkles.
Continue this way until all the dough is used up.
Bake in a preheated oven at 356°F for about 20 minutes.
