Ingredients

CREAMY MANGO CAKE

  • 9 oz eggs
  • 1 1/2 cups sugar
  • 1/2 tsp salt
  • 7 oz heavy cream
  • 2 cups all-purpose flour
  • 1/2 cup potato starch
  • 2 tsp baking powder
  • 1/2 cup sunflower seed oil
  • 21 oz mango puree
  • 11 oz passion fruit puree
  • 1/2 cup sugar
  • 3 tbsps gelatin sheets
  • 7 oz water
  • 2 tbsps orange zest
  • 2 tbsps lemon zest
  • 3 tbsps gelatin sheets
  • 16 oz heavy cream
  • 7 oz white chocolate

PREPARATION CREATIVE MANGO CAKE

  • Gently whisk the eggs with sugar and salt, gradually add the cream, then the flour and starch sifted with baking powder.
    Mix gently, pour onto a 16×24 inch pan.
    *You can flavor this biscuit with citrus peels.
    Bake in a preheated oven at 350°F for about 30 minutes. Cooking time varies, always perform the toothpick test to check doneness.

  • Combine the purees with granulated sugar and heat to 104°F, add the gelatin previously rehydrated in water, and mix well.
    Cut the cream biscuit in half.
    Place one half of the biscuit on a serving tray with a removable rectangle and pour the puree onto this half of the biscuit within the removable rectangle.
    Cover with the other half of the biscuit.
    Freeze quickly.

  • Bring the water with citrus peels to 104°F, add the softened gelatin in cold water for 10 minutes.
    Chop the white chocolate and melt it in a double boiler.

    Gradually add water to the white chocolate, integrating a third of the water at a time.
    Once completed, you should have a smooth and homogeneous mixture.
    Let it cool and meanwhile, whip the cream then add it to the mousse, paying attention to the temperature, which should be lukewarm now.
    Incorporate the cream with gentle movements from bottom to top. Mix everything and proceed by pouring the mousse onto the cake.
    Freeze everything quickly.
    Decorate the surface with passion fruit. Remove the removable rectangle and cut to 1.5×5 inches.
