EASTER BUNNIES
- 3 1/2 oz flour (W260-W290)
- 7 tbsp milk
- 1 tsp fresh yeast
- Starter dough (Previously prepared)
- 14 oz flour (W260-W290)
- 1/4 cup sugar
- 1/3 cup milk
- 1/2 cup egg whites
- 1/4 cup extra virgin olive oil
- 2 tsp salt
- 1 egg yolk
- 1 tbsp milk

First, you need to prepare the starter dough, mix the milk, yeast, and flour in a bowl with a fork until you get a soft batter, cover and let rise until doubled.
Then place the starter dough in a stand mixer, add the flour and start mixing with the spiral hook, adding sugar and milk gradually, mixing roughly.
Add the egg whites in three additions, mixing after each addition.
With the dough mixed, gradually add the extra virgin olive oil and lastly the salt, proceeding with the final mixing.
Place the dough in a bowl, seal with plastic wrap, and let rise at 79°F until doubled.
At this point, turn the dough out onto a lightly floured work surface and divide it into 15 parts. Shape each part into bunnies and place them on a baking tray lined with parchment paper.
Finally, brush the bunnies with the beaten egg yolk mixed with a splash of milk.
Let them rise, in a turned-off oven with the light on, for about an hour until they puff up a bit more.
Bake in a preheated oven at 356°F for about 20 minutes. Remove from oven and cool on a wire rack
