EASTER DONUTS
- 3/4 cup flour (W260-w290)
- 1/2 cup milk
- 1 tsp fresh yeast
- Starter (Previously prepared)
- 3 cups flour (W260-W290)
- 1/4 cup sugar
- 1/3 cup milk
- 4 large egg whites
- 1/4 cup extra virgin olive oil
- 2 tsp salt
- 1 egg yolk
- 1 tbsp milk
- as needed Colored sugar sprinkles
EASTER DONUTS
First, prepare the starter by mixing the milk, yeast, and flour in a bowl with a fork until you get a soft batter, cover and let rise until it doubles.
Then place the starter in a stand mixer, add the flour and start the dough using the spiral hook, adding sugar and milk gradually, roughly incorporating.
Add the egg whites in three parts, incorporating each time.
With the dough incorporated, add the extra virgin olive oil gradually and finally the salt, proceeding to the final incorporation.
Place the dough in a bowl, seal with plastic wrap and let rise at 79°F until it doubles.
At this point, turn the dough onto a lightly floured work surface and divide into 15 parts. Divide each part again into two, form a long rope with each piece of dough. Start braiding the two ropes to form a tight braid.
Stick the two ends together, forming a DONUT. Place them, as you go, on a baking sheet covered with parchment paper.
Continue in this way until all the dough is used. You will get 15 donuts.
Finally, brush the donuts with the beaten egg yolk with a drop of milk and sprinkle them with colored sugar sprinkles.
Let rise in an oven turned off with the light on, for about an hour. They should puff up a bit more.
Bake in a preheated oven at 356°F for about 20 minutes. Remove from oven and let cool on a wire rack.
