Focaccia, a basic dough for a soft and tasty leavened bread. A focaccia with a crunchy bottom and a soft texture suitable to be enjoyed as is or stuffed with cold cuts or vegetables 😋.

An incredibly easy focaccia to make at home, just mix everything in a bowl with a spoon and let it rise immediately.

FOCACCIA

  • 2 cups all-purpose flour
  • 2 cups bread flour
  • 1.5 cups water
  • 1.5 tsp fresh yeast
  • 1/2 tsp granulated sugar
  • 1.5 tbsp salt
  • to taste extra virgin olive oil
  • to taste salt
  • to taste rosemary

  • To prepare our focaccia, first dissolve the yeast in a little water (at room temperature) taken from the total.

    In a bowl, add the two flours and the sugar.

    Then mix together, make a well in the center and add the water in which you dissolved the yeast and gradually all the remaining water, stirring with a spoon.

    At this point, you can add the salt and stir to combine.

    You will get a soft and sticky dough, and that’s perfectly fine.

    Cover the bowl with plastic wrap and let it rise in a recently turned-off oven at approximately 82°F (28°C) until it has tripled in volume.

    The rising time may change depending on the external temperature and may take up to 4 hours. Naturally, if you knead in summer and don’t have air conditioning like me, it can rise at room temperature given the hot weather 😅.

    Sprinkle the work surface with all-purpose flour, turn out the soft focaccia dough, and sprinkle it with flour.

    Using a dough scraper, fold the dough in half twice, bringing the two sides towards the center. Add more flour if needed.

    Finally, transfer the dough to a previously oiled baking sheet and stretch it with your fingertips.

    Then add 2 tablespoons of oil and spread the dough with your fingertips. Add rosemary and coarse salt.

    Let it rise in the baking sheet for at least another hour, or however long it takes to reach the edges of the sheet.

    Season with 2 tablespoons of water, another generous drizzle of oil, and more rosemary.

    Bake in a hot oven at 392°F (200°C) for about 35 minutes, in the last 5-10 minutes move it to the bottom of the oven and then for the last minute, slightly turn on the grill and transfer it to the top of the oven.

    Let it cool slightly if you can resist the temptation to bite into it 😋
