- 3/4 cup red split lentils
- 1 cup breadcrumbs (Whole wheat)
- 1 carrot
- 1 celery stalk
- to taste garlic
- 1 cup spinach
- to taste extra virgin olive oil
LENTIL AND SPINACH BURGER
To prepare the lentil and spinach burgers, first wash and peel the carrot and celery. Dice them, place everything in a pan with a tablespoon of extra virgin olive oil, and sauté for a few minutes.
Rinse the red split lentils and add them to the pan, letting them flavor for a few minutes with a ladle of water.
Once they are cooked and the water is fully absorbed, place everything in a bowl and let it cool slightly.
Add salt, chili pepper, breadcrumbs, and spinach, and blend with an immersion mixer until you get a consistency suitable for handling with your hands.
Form the burgers, wetting your hands if necessary to prevent the mixture from sticking, coat them in breadcrumbs, and cook them in the oven at 350°F for 20 minutes or in a non-stick pan. And voilà, lentil and spinach burgers are ready to be enjoyed 😋
