Linzer strips are typical Austrian Christmas cookies. A fine almond shortcrust pastry with cinnamon and orange that meets a red currant jam filling for a truly wonderful sweet and sour result.

LINZER STRIPS Ingredients
- 2 cups all-purpose flour
- 7 oz almonds (Chopped)
- 1 1/4 cups powdered sugar
- 1 cup butter
- 1/2 teaspoon baking powder
- 1 pinch ground cinnamon
- 1 pinch salt
- 2 orange zest
- 1 egg
- 1 egg yolk
- 14 oz red currant jam
- as needed powdered sugar
LINZER STRIPS
Let’s start preparing these delicious and fragrant Linzer strips.
First, mix the flour with the chopped almonds, baking powder, and cinnamon.
In the bowl of the stand mixer, put the butter with the sugar and mix with the paddle attachment.
Add the whole egg and egg yolk, salt, orange zest, and finally the flours. Work until you obtain a smooth mixture.
Roll out 2/3 of the dough and line a rectangular pan about 13×17 inches, prick the entire surface with a fork and put in the fridge for at least 1 hour.
Roll out the remaining dough to a thickness of about 1/8 inch and cut strips about 1/2 inch wide. Lay them on a sheet of parchment paper and put them in the fridge too.
After the resting time for the dough, put the baking pan with the spread dough in a preheated oven at 350°F and bake for about 15 minutes.
After this time, remove the baking pan from the oven and spread the red currant jam over the dough.
Place the previously cut strips diagonally over the jam, spacing them about 1/2 inch apart, and put back in the oven for another 15 minutes.
Let cool and then cut into rectangular strips of about 2×1 inches and sprinkle with powdered sugar.
