Mantovane with bologna are very simple sandwiches with a crispy and golden crust and a white and compact crumb. Stuffed with plenty of bologna, they are the best, but of course, they are also delicious filled with any cold cuts or, why not, with Nutella or jam 😋

MANTOVANE WITH BOLOGNA
- 4 cups Manitoba flour
- 1 tsp fresh yeast
- 2.5 tbsp extra virgin olive oil
- 2 tsp salt
- 1 cup water
- 1 tsp honey
- to taste bologna
Steps
To prepare Mantovane with bologna, start by dissolving the fresh yeast in a finger of water taken from the total and the teaspoon of honey. Stir to dissolve everything well. Add the flour, the rest of the water, the oil, and mix using a spoon, then finally add the salt. When a rough dough has formed, turn it onto a table and continue kneading by hand until you create a nice smooth and firm dough. Form a ball and let it rise in a bowl covered with plastic wrap for about 2 hours. After the first rise, roll out the dough on the floured work surface and, using a rolling pin, create a rectangle. Divide the rectangle into 8 parts.
Roll out each part with the rolling pin, roll it up to form a sausage. Turn it vertically and roll it out again with the rolling pin to create a long and narrow strip. Roll the strip into tight rolls. Arrange all the rolls on the baking tray covered with parchment paper and let them rise covered with a towel for 1 hour.
After rising, make a cut in the center of the loaf lengthwise, then heat the oven to 464°F (240°C) static mode. When it reaches temperature, bake the rolls and lower the temperature to 392°F (200°C). Cook the rolls for 20-25 minutes, until they become slightly golden.
Remove them from the oven, let them cool on a wire rack, fill as desired and… Enjoy 😋
