Mimosa truffles, simple and delicious treats to prepare for International Women’s Day or any other occasion. Delicious to eat and beautiful to look at. To prepare these truffles, you can use either sponge cake, bundt cakes, or pound cakes.

MIMOSA TRUFFLES
- 9 oz white chocolate
- 0.5 cup fresh liquid cream
- 2 tsp butter
- to taste lemon zest
- 3 pcs eggs
- 0.5 cup sugar
- 0.75 cup all-purpose flour
- to taste lemon zest
- to taste limoncello
- 7 oz white chocolate

To prepare these truffles, first, you need to make the ganache which must cool well in the refrigerator.
In a saucepan, bring the cream to a boil, add the white chocolate off the heat, and stir with a whisk until it melts. Add the butter and grated lemon zest. Cover with cling film and let it set in the refrigerator.
Now, let’s move on to preparing the sponge cake: whisk the room temperature eggs with sugar until light and foamy, add the flour while being careful not to deflate the mixture. Finally, add the lemon zest.
Pour into a previously buttered and floured baking pan and bake at 350°F for about 25/30 minutes.
Once baked, crumble the sponge cake and add the limoncello or, if you prefer, a syrup made with sugar and lemon water. You can choose to add a few drops of yellow food coloring if you wish; I did not add any. Melt the 7 oz of white chocolate and set aside.
When the ganache is well chilled and hardened, form small balls and dip them in the previously melted white chocolate and immediately roll them in the crumbled sponge cake. Place the balls in paper cups.
