Radicchio and walnut meatballs are unusual and tasty vegetarian meatballs that can be served as a delicious appetizer or a tasty side dish.
A simple recipe where radicchio, sautéed in a pan, is combined with egg, cheese, bread, and walnuts, turned into small meatballs.
Radicchio and walnut meatballs can be fried or cooked in the oven or air fryer; whatever choice you make, success is guaranteed.

Ingredients
- 7 oz radicchio
- 1/2 onion
- to taste extra virgin olive oil
- to taste salt
- 3/4 oz walnuts
- 1 egg
- 1 3/4 oz bread
- to taste milk
- 3 oz Taleggio (Or other cheese)
- 1 3/4 oz Parmigiano Reggiano DOP
- to taste breadcrumbs
- 2 eggs
- to taste salt
- to taste pepper
- to taste all-purpose flour
- to taste breadcrumbs

Steps
To prepare the radicchio and walnut meatballs, first wash the radicchio, dry it, and cut it into strips.
Pour a drizzle of oil into a non-stick pan, add the thinly sliced onion, and then the radicchio; salt, pepper, and cook for 5 minutes.
Break the stale bread into pieces and soak it a bit in milk.
Crack the egg into a large bowl, salt, and beat lightly; add the Parmigiano, perfectly squeezed soaked bread, walnut pieces, and mix well.
At this point, add the sautéed radicchio and diced Taleggio, or any other cheese you like.
Add enough breadcrumbs to the mixture to obtain a well-moldable mixture.
Beat the eggs in a bowl for breading and salt them lightly. Arrange the flour on another plate and breadcrumbs on another.
Form the meatballs; roll them first in flour, then in egg, and finally in breadcrumbs.
Now choose your preferred cooking method: frying, air frying, or baking.
In my case, I fried them.
Heat a pan with plenty of oil and fry the croquettes until perfectly golden, turning them once.
Drain them on absorbent paper.
