Today we prepare savory crepes with provolone and speck, soft and delicious savory pancakes to bake in the oven, a classic and very tasty main dish that is always impressive.
They are also a smart preparation because you can easily prepare them in advance and bake them just before serving. I filled them with provolone and speck and baked them with a drizzle of oil, a pat of butter, and a sprinkle of grated Grana Padano… you can fill them as you like and top them with béchamel sauce or a fresh basil sauce 😉

SAVORY CREPES WITH PROVOLONE AND SPECK
- 1 3/5 cups all-purpose flour
- 1 1/2 tbsp butter
- to taste salt
- 2 eggs
- 2 1/4 cups milk
- 7 oz speck
- 7 oz smoked provolone cheese
- to taste milk
- to taste extra virgin olive oil
- to taste grated Parmesan cheese
- to taste black pepper
Steps
To prepare these delicious crepes, first we need to prepare the crepe batter. In a bowl, sift the flour, add a pinch of salt, and the slightly beaten eggs. Mix with a hand whisk. Gradually add the milk and continue mixing until you have a smooth batter with no lumps. Cover with plastic wrap and refrigerate for at least 30 minutes.
Take out the batter, mix again with the whisk, and start cooking.
Heat a 9-inch non-stick pan well with a pat of butter.
Pour a ladle of batter and swirl the pan in all directions so that the mixture spreads evenly across the surface, forming a thin layer.
Cook for about 1 minute until the edges start to brown and release, flip and cook on the other side for about 30 seconds. Continue this way until the batter is finished, buttering the pan slightly with buttered kitchen paper every 3-4 crepes.
Fill the crepes with speck and a bit of provolone.
Fold them into a half-moon and gently press, fold the crepe in half again to create a fan shape. Grease a baking dish well with butter, arrange the crepes slightly overlapping. Add plenty of butter flakes, a drizzle of extra virgin olive oil, a bit of pepper, and a generous sprinkle of grated cheese. Bake in a preheated oven at 392°F for about 15-20 minutes until well gratinated.
