SOFT FIGS AND WALNUTS CAKE
- 1 1/2 cups all-purpose flour
- 1/3 cup milk
- 1/2 cup cornstarch
- 1/3 cup extra virgin olive oil
- 3/4 cup sugar
- 2 eggs
- 1 packet baking powder
- 1 pinch salt
- 12 oz figs
- 3/4 cup walnuts

Let’s start preparing this delicious cake.
With electric beaters, whip the eggs with the sugar and a pinch of salt until they are white and frothy.
Gradually add the oil, cornstarch, and sifted flour and baking powder, then incorporate the room-temperature milk and mix everything with a hand whisk or spatula until smooth and lump-free.
Add the chopped walnuts and mix them into the batter.
Butter and flour a 9.5-inch round pan and pour the batter into it.
Add the figs cut in half or into pieces into the batter, push some to the bottom and leave others on the surface.
Transfer the pan to a preheated oven at 356°F (static function) for about 35-40 minutes. Always check the cake’s doneness with a toothpick, as baking times may vary depending on your oven.
Remove the cake from the oven, let it cool, and then place it on a plate or tray.
