A pea puree, with squid simply seared in the pan and to complete the dish a goat cheese sauce and sun-dried tomatoes to give the right note of acidity to the dish.

SQUID AND PEAS
- 14 oz peas
- 8 squid
- 5.3 oz goat cheese
- to taste milk
- to taste salt
- to taste pepper
- to taste sun-dried tomatoes

To prepare this delicious main dish of squid and peas, first sauté the peas in a pan with a drizzle of oil, season with salt and pepper, cover with water and cook on low heat for 10 minutes; Set aside some peas to complete the dish while blending the rest until creamy with an immersion blender, adjust salt and pepper, and set aside.
Emulsify the goat cheese with milk until creamy.
Sear the squid in a pan with a drizzle of oil at high temperature, for about 3 minutes on each side; lightly salt and keep warm; serve by placing the pea puree at the base, add the goat cheese cream, place the squid on top and finish with chopped sun-dried tomatoes and the whole peas we set aside.
