STRAWBERRY AND MASCARPONE CRUMBLE CAKE
- 2 3/4 cups all-purpose flour
- 3/4 cup sugar
- 1/2 cup butter
- 1 egg
- 1 packet baking powder
- 1 packet vanillin
- lemon zest
- 1 cup strawberries
- 1/2 cup ricotta cheese
- 1/2 cup mascarpone
- 1/4 cup powdered sugar
- 1 egg
STRAWBERRY AND MASCARPONE CRUMBLE CAKE
To prepare this delicious crumble cake, first think about the filling.
In a medium-sized bowl, add the ricotta, mascarpone, powdered sugar, and egg. Mix with a spoon to combine the ingredients, then add the strawberries cut into pieces. Place in the refrigerator until ready to use.
Prepare the shortcrust pastry: in a bowl, combine the sugar and butter cut into pieces and mix with a fork.
Add the egg and blend it with the butter and sugar.
At this point, add the flour, vanillin, baking powder, lemon zest, and mix with your hands until crumbly.
In a buttered and floured baking dish, spread half of the dough and press it down slightly with the back of a spoon.
Retrieve the filling from the fridge and add it on top of the shortcrust pastry.
Cover with the remaining crumbled shortcrust pastry.
Bake in a preheated oven at 356°F (180°C) for 30 minutes.
