Ingredients

  • 1 cup peeled almonds
  • 2/3 cup toasted hazelnuts (chopped)
  • 2 1/2 tbsp sugar
  • 1 egg white
  • 1 tbsp rum

Steps

  • First, chop the almonds and hazelnuts: finely chop the almonds and more coarsely chop the toasted hazelnuts. You can do this by hand with a knife or use a food processor as I did. Transfer the chopped almonds into a bowl and then add the sugar.

  • Now whisk the egg white, then take 2 tablespoons of it and add them to the mixture. Then also add the toasted and chopped almonds (or nuts you prepared).

  • Then add to the mixture the tablespoon of rum and start having fun mixing with your hands. Meanwhile, melt the dark chocolate (in a double boiler or in the microwave) and once melted, pour it into the bowl.

  • Continue kneading and when all the ingredients are well combined (it will only take a few minutes) take a little of the mixture, flatten it in the palm of your hand and place a toasted hazelnut in the center.

  • Close the mixture around the hazelnut and shape it into a point or a sphere, as you prefer. Place the chocolate truffle with a hazelnut center on a plate or container and coat the sweet with powdered sugar. Repeat until all the mixture is used.
