The Abruzzese buns of San Biagio are a little-known recipe from my area with very dated origins.
Easy to make and super tasty, they are prepared in the days around this holiday to honor the Saint celebrated on February 3rd.
In Abruzzo we have several recipes prepared for this holiday, and indeed you can check the blog, but I will add many more over time.
You can fill them with chocolate chips as I did, or with raisins.
These buns need time to rise, but I’m sure you’ll have the patience to wait to enjoy these tasty buns.
I made the dough with the help of my Croustina Panasonic bread machine, but you can knead by hand or with the help of a stand mixer.

Ingredients to Make the Abruzzese Buns of San Biagio
- 4 cups all-purpose flour
- 1/4 cup sugar
- 1 tsp anise seeds (optional)
- 1 tbsp fresh yeast
- 1 cup whole milk
- 1 egg (medium)
- 1 tsp honey
- 3 1/2 tbsp butter
- 3/4 cup dark chocolate (or pre-soaked raisins)
- 2 tbsp powdered sugar
Preparation of Abruzzese Buns of San Biagio
In the bread machine’s basket, insert the kneading blade, then add all ingredients in the order listed, starting with the dry ingredients and then the liquids, except for the chocolate chips.
Start the machine by setting the kneading program, for mine it’s button 17 and lasts 45 minutes.
Let knead for about 30 minutes, then add the chocolate chips and work the dough for a maximum of 2 minutes, so the chocolate does not heat up too much, as it releases some color to the dough.
Once done, transfer the dough to a large bowl and let it rise until it doubles in size.
Transfer the dough to a lightly floured work surface, create a ball….
….form 15 equal balls.
Place the balls well-spaced on a baking tray lined with parchment paper and let rest for another hour.
Once risen, make a small cut on each bun and bake in a preheated oven at 356°F for 15-18 minutes, checking the cooking.
Remove from oven, let cool, and dust with powdered sugar before serving.
