Barmbrack Cake

The Barmbrack cake is an Irish dessert prepared for Halloween and resembles a Christmas cake because it contains raisins and candied fruit. It’s not unusual to find this cake during the Christmas period in Ireland.
I came across this cake by chance really… always through acquaintances or someone who went on vacation to a certain place, maybe they told me how to make certain international recipes… that’s how I learn about most non-Italian recipes.
Traditionally, an object is hidden inside this cake (similar to the Befana sweet focaccia in Italy), for example, if you find the ring, you’ll get married within the year, if you find a pea or a thimble, you won’t get married within the year, and if you find a coin, you’ll have good luck.
In Ireland, Halloween represents the transition from one season to another, and just like we make wishes for the new year to have a better year, they hope for something positive with food and with this cake that holds a surprise inside.
The tradition says that the Barmbrack cake should be prepared 2 days in advance and stored in wax paper to be eaten on Halloween, but I recommend eating it as soon as it cools down because it tends to dry out, so store it in a plastic bag or wax paper if you don’t consume it immediately.
If you also want to put an object inside the cake, I recommend wrapping it in foil or parchment paper before inserting it into the batter before baking.

Ingredients for a Barmbrack Cake for 6 people

  • 1 1/4 cups Unsweetened iced tea
  • 13 oz Mixed candied fruit and sultanas
  • 8 oz All-purpose flour
  • 4 1/2 oz Sugar
  • 1 Small egg
  • 1 packet Baking powder for savory pies
  • 2 tsps Ground cinnamon
  • 1 tsp Ground ginger
  • 2 Ground cloves
  • 2 tbsps Honey

Preparation of the Barmbrack Cake

First, prepare the tea even the day before and place it in the fridge without adding sugar. Wash the raisins under water, then drain and put them in the mixer bowl with the candied fruits, pour in the 1 1/4 cups of tea and let them soak for 2 hours.

After the time has passed, add the flour, sugar, spices, egg, and mix with a hand mixer at medium speed, then add baking powder for savory pies, mix well until all ingredients are incorporated.

Butter and flour a loaf pan, pour the mixture into it and bake in a preheated oven at 340°F for 1 hour.
