Carnival Frappe

Carnival frappe are a typical Abruzzese dessert, although this recipe is also made in other regions of Italy, but called differently.
At first glance, the frappe seem all the same, beyond the recipe, but then among the ingredients there is always some variation that characterizes them.
Personally, every year I prepare frappe for my family, also because my children especially ask for them… they are appreciated by everyone!!!
Just knead simple ingredients to then make sheets that we will cut to create strips of dough to put in boiling oil, and we will get really tasty fritters.
The period is right, so let’s get to work!

Ingredients for making Carnival Frappe

  • 3 Eggs
  • 3 tablespoons Sunflower seed oil
  • 2.8 oz Sugar
  • 0.67 fl oz Rum
  • Grated zest of 1 lemon
  • 1 packet Vanillin
  • 1 teaspoon Baking powder
  • 3 cups Flour + 1/3 cup for the work surface
  • Sunflower seed oil for frying
  • 1.75 oz Powdered sugar

Preparation of Carnival Frappe

  • Work all the ingredients well with a mixer, when the ingredients are well mixed place the dough on a work surface and knead it into a loaf.
    Work to form sheets with a pasta machine, setting it to the 4th notch from the thickest to the thinnest, but you must adjust according to your machine as each is different.
    Then cut strips of dough about a finger-wide or a little more with a pasta cutter.
    It doesn’t matter if they’re all the same size or not, they’re beautiful even if they’re different, I formed an eight with the dough, then twisted others…!
    Prepare a pan with seed oil and heat it up, when the oil is ready, cut strips of pasta about 2 fingers wide and place in boiling oil, turn them over and drain them on absorbent paper…..

  • then place them in a container and sprinkle with powdered sugar.
