Christmas Sweet Pitte

The Christmas Sweet Pitte are a traditional Calabrian dessert made during the Christmas holidays.
I, who do not like chopped nuts in desserts and even less the raisins, must say that I ate them and they were really good.
Because the biscuit does not remain very thin and if the raisins are well soaked, they are not very noticeable, and the ingredients blend well, but you can taste it and it conquers you.
Just let them dry well after baking and then cool well, after which they can be stored in a tin box or plastic bag for days.
Biscuits that resemble mustaccioli in shape, but have nothing related in terms of flavor.

Ingredients to make Christmas Sweet Pitte

  • 2 eggs (medium)
  • 3/8 cup honey
  • 1/2 cup sugar
  • 1 1/4 cups raisins
  • 1 cup walnuts, shelled
  • 4 tbsp extra virgin olive oil
  • 1 packet baking powder
  • zest of 1 lemon
  • zest of 1 orange
  • 2 tbsp cooked must (or Marsala wine)
  • 4 1/4 cups all-purpose flour

Preparation of Christmas Sweet Pitte

  • First, soak the raisins in warm water for at least 20 minutes.
    Chop the walnuts coarsely, I made them a bit smaller, set aside until use.
    In a bowl, put the eggs with the sugar and beat well with a fork if you make the dough by hand, otherwise, you can work the dough with electric beaters.
    Then add the honey, extra virgin olive oil, chopped walnuts, grated lemon and orange peels.
    Also add the cooked must or Marsala wine and mix a little.

  • ….working well to incorporate everything and obtain a homogeneous and also slightly sticky dough.

  • At this point, pour everything onto a floured work surface and work the dough well.
    Roll out a sheet about 1/8 inch thick, cut strips about 2 fingers wide, then cut again to create diamonds.
    Once the cookies are obtained, transfer them to a baking tray lined with parchment paper, trying to space them a little, then bake in a preheated oven at 350°F for about 15 minutes.

  • The result should be a slightly colored cookie on the surface. At the end of cooking, let them cool before enjoying, they will taste better.
