Codfish in Tomato Sauce with Potatoes is a traditional dish from Abruzzo that I personally had never prepared before. One day, I made it at my mom’s house under her supervision because I was curious to taste it.
I must say the dish is not good; it is super good, you absolutely have to make it, and I am sure you will agree with me.
If possible, use Norwegian codfish instead of lower quality ones, the taste will significantly improve.
In Abruzzo, especially during the Christmas season, codfish is cooked a lot, it is fried in batter and can be found on tables especially on Christmas Eve.

Ingredients for Codfish in Tomato Sauce with Potatoes
- 2 Onions (medium)
- to taste Pepper
- to taste Salt
- 1.5 lbs Codfish (desalted and deboned)
- 6 Potatoes (medium)
- 2.2 lbs Canned tomatoes
- 1 tsp Oregano
- 3 tbsp Extra virgin olive oil
Preparation of Codfish in Tomato Sauce with Potatoes
Take a large non-stick pan with high sides, sauté the chopped onions with the oil, then add the pepper, mix well, and add the tomatoes passed through a food mill. Cook for about ten minutes over medium heat, then add the deboned codfish cut into pieces, adjust the salt, and cook over medium-low heat for about 30 minutes.
Meanwhile, peel the potatoes, wash them, and slice them to about 1/2 finger thickness, place them in a bowl, and lightly salt them. When the codfish is practically cooked, take a large baking dish with fairly high sides, and put a little of the codfish sauce as a base, adding a dash of water, then place half of the sliced potatoes as a base, then a little more than half of the codfish and sauce, then another layer of sliced potatoes, and finally the remaining codfish in sauce. Cover with foil and bake at 400°F for about 45 minutes, checking the cooking.
Your dish will be ready when the sauce is sufficiently reduced, but everything should not be dry and arid. Enjoy your meal!!!
