Cold potatoes are a side dish I could eat all the time… I love them, even though I personally cook them in many ways, I really like potatoes in every version!!!
Every now and then I make them like this, boiled and then seasoned with garlic, salt, and parsley. Have you ever prepared them this way?
I recommend using potatoes that are not too watery, otherwise they become too soft quickly, and the dish won’t turn out well!
I always use local potatoes that are of very high quality and suitable for every use; they are exceptional.
The positive thing is that you can also prepare them the day before and consume them at the right time; they will keep very well in the fridge, and even if there are leftovers, you can always store them in the fridge for 2-3 days.
A good idea for a cold meal to take to the beach in summer, although to be honest, I sometimes make them even in winter, and I enjoy eating them.

- 8 medium potatoes
- to taste extra virgin olive oil
- to taste salt
- to taste parsley
- 2 cloves garlic

Preparation of Cold Potatoes
Take the potatoes, peel them, wash them, cut them into very large pieces or nice thick slices, and boil them.
They should cook until they are slightly soft but not so that they cut as soon as we touch them.
Drain them, put them in a bowl, season them with chopped parsley, salt, extra virgin olive oil, and chopped garlic.
Gently mix the potatoes and put them in the fridge for at least 1 hour before serving.
