Cookies with Puffed Rice

Cookies with puffed rice were created partly to make somewhat different cookies and partly because I needed to use up some leftover chocolate puffed rice.
Obviously, you can choose whether to use chocolate puffed rice like I did, or plain white puffed rice.
Apart from needing to use up some puffed rice, I particularly liked the chocolate one, partly because of the color on the cookies, partly because I like the chocolate flavor.
The puffed rice is not very uniform on the cookies because when they are made, they are round and well-formed, but then they spread a bit during baking, which is exactly how it should be.

Cookies with Puffed Rice

Ingredients for making Cookies with Puffed Rice

  • 3.5 oz Butter
  • 3.2 oz Sugar
  • 1 Medium egg
  • 4.9 oz All-purpose flour
  • 2.5 oz Chocolate puffed rice (or plain white)

Preparation of Cookies with Puffed Rice

  • In a stand mixer, place the softened butter with the sugar and work to get a cream, then add the egg and flour and mix well.

    Once you have a homogeneous mixture, create not-too-large balls using two spoons and dip them one by one in a small bowl with the puffed rice, rolling them around and then shaping them with your hands

  • placing them on a baking sheet lined with parchment paper.

  • Bake in a preheated oven at 356°F for about 12-13 minutes, checking the cooking.
