The crunchy MDP rolls are rolls I often make because they remain crunchy on the outside and have a soft crumb on the inside.
They are very useful for me as I use them to make sandwiches for my husband to take to work.
Generally, I make a quantity useful for both daily meals and some to freeze as a backup.
When I last made them, my husband and I broke one while it was still warm and it was truly something exceptional.
Even if we don’t consume them all in one day and don’t want to freeze them, these rolls remain soft for at least 2-3 days and if we really want to treat ourselves, we can warm them in the microwave, and they’ll be just like freshly baked.

- 2 1/2 cups lukewarm water
- 1 tsp fresh yeast
- 1/2 tsp sugar
- 6 3/4 cups all-purpose flour
- 1 tbsp salt
- 2 tbsp butter

Preparation of Crunchy MDP Rolls
I prepared these rolls using the bread machine, but of course, you can also make them by hand if you don’t have one.
In the bread maker, I put lukewarm water, fresh yeast, sugar, then covered with flour and placed the salt and butter on the surface of the flour.
I programmed the bread maker for dough, on my Panasonic machine it’s program 28, lasting about 45 minutes.
I started the machine and after the working time, I left the dough in the bucket with the machine off for about 1 hour
…then I poured the dough onto a well-floured work surface, created a non-sticky ball, and let it rest for 15 minutes.
At this point, I divided the dough into 8 pieces, but if you want smaller rolls, of course, divide into 10.
Create 8 strips of dough, roll them on themselves and while rolling, stretch a little with the dough to get elongated rolls.
Prepare a baking tray lined with parchment paper, position the rolls on it, and press them a bit
let them rise for about an hour, then bake in a hot oven at 392°F for 20-25 minutes.
