The crunchy pumpkin bread was born to be made entirely with the bread machine, but by following the ingredients, you can easily knead by hand or with the stand mixer, it will be delicious!
I wanted to make a tasty bread with a fairly crunchy crust and the result rewarded me, you absolutely have to try it!
I poured the ingredients into the basket as you see them listed, but you can also put the dry ingredients first and then the liquids. I also improvised a bit and paid little attention to the order, but the result was still excellent.
It is not a bread with holes, but well-leavened, very soft inside and crunchy outside.
I paired it with meat dishes with sauce, but really suitable for everything, even a nice sandwich with cold cuts.

Ingredients for making Crunchy Pumpkin Bread
- 9 oz pumpkin (mashed)
- 1/4 cup water (cold)
- 1/4 oz fresh yeast
- 4 cups all-purpose flour
- 1 tbsp salt
- 1/2 tsp sugar
- 1.5 tbsp extra virgin olive oil

Preparation of Crunchy Pumpkin Bread
For the pumpkin puree, weigh a greater raw weight (at least 200 g more than needed), remove the skin and cut into chunks to then boil and drain, finally blend well.
Alternatively, the pumpkin chunks can be cooked at 350°F in the oven for 1 hour and then blend everything.
Take the bread basket, insert the blade, and pour the ingredients in the order listed, or first the dry ingredients and then the liquids.
Put the basket in the machine, set program 8 for my Panasonic Croustina, if you use another machine, you need to look for a program that makes dough, rest, and cooking for a total of 4 hours.
Once the machine is on, it won’t start immediately, but it will still do everything by itself. I made a small loaf; if you want, you can also double the doses and at the end of cooking check and possibly add a few minutes more to cook with a few more minutes.
If you want, you can make everything with another bread machine, or knead by hand or with the stand mixer, then let it rise and possibly bake it in the conventional oven at 390°F for about 1 hour.
