Eggplant Swirls

Eggplant swirls are a cute and tasty idea to use as an appetizer or for a buffet.

They are simple and quick to make, you just need some puff pastry and grilled eggplants, which of course you can prepare in advance, season them and put them in the fridge to make the swirls the next day.

In my house, we like to season these types of vegetables with garlic, but of course, you can use the minimum necessary if you can’t tolerate it, or use powdered garlic in small doses.

They were a big hit in my house, and I’m sure they’ll be a hit on your table too.

Ingredients to make Eggplant Swirls

  • 1 roll of rectangular puff pastry
  • 22 slices of roasted eggplants (depends on size)
  • to taste salt
  • to taste garlic
  • to taste parsley (chopped)
  • 1 tablespoon of extra virgin olive oil

Preparing Eggplant Swirls

  • Prepare the grilled eggplants by seasoning them with chopped garlic, oil, salt, and chopped parsley, mix everything and put in the fridge.

    Take the rectangular puff pastry, unroll it, and spread the previously seasoned eggplants on top.

  • ……roll the pastry tightly starting from the wide side, using the paper the pastry is wrapped in to assist in rolling.

    Refrigerate for at least half an hour before slicing.

    Prepare a baking tray with parchment paper, take the roll, and cut it into slices about the width of a finger.

  • place our swirl-shaped slices on the tray and bake in a preheated oven at 465°F for about 15 minutes.
