Fish skewers might be my favorite seafood main course, they are delicious, simple to prepare, and make a great impression.
I make them often, but for Christmas Eve dinner and New Year’s Eve, they are a must, even though they’re amazing any day of the year!
You can prepare them the day before, store them in the fridge, and then cook them in the oven the next day to serve to your friends and family.
You can use fresh or frozen fish, just adjust the quantities of the various fish accordingly.
I make them with a simple and tasty breading, but it will satisfy us to the fullest.
Follow my recipe and make them yourselves, don’t buy them pre-made… they cost a fortune and making them ourselves saves a lot.

Preparation of Fish Skewers
Take the fish and if it’s fresh, clean, gut, and remove any unnecessary parts, wash it and drain; if frozen, thaw it and let it drain with a colander.
Once well thawed, assemble the fish skewers by placing 2 shrimps on each skewer.
Prepare the breading by blending the parsley (previously washed and dried) and garlic cloves, then put the mixture in a bowl, add the breadcrumbs, salt, vinegar, and extra virgin olive oil, and mix well.
Once the skewers are assembled, put the 2 tbsp of extra virgin olive oil in a plate, roll the skewers in it, then coat them with the previously prepared breading.
Line a baking tray with parchment paper, drizzle with extra virgin olive oil, place the skewers on it, lightly sprinkle with salt and drizzle with extra virgin olive oil.
Bake in a preheated oven at 392°F for about 25 minutes, checking the cooking. If they color too quickly on the surface, cover them with aluminum foil.
Once cooked, sprinkle with lemon to taste and serve hot!
