Flavorful cod in sauce is one of the few ways I like to eat cod because if there’s even a tiny bone, rest assured it will end up with me.
It’s a simple recipe but truly unmistakable in taste. You have to try making my recipe, and I’m sure you’ll agree with me.
The cod cooked this way is typical of Italian cuisine, especially from the southern regions of Italy.
The cod must first be soaked for 2-3 days and then drained before cooking it as desired. If not consumed immediately, after desalting, it can be frozen for later use.
In this recipe, I removed the skin, but it can also be cooked with the skin.
The quantity in the pan in the photo is less than the ingredients described because it is an old recipe, and when I cooked it again, I made less than usual.

Ingredients for Flavorful Cod in Sauce
- 14 oz salted cod (weighed, not soaked)
- 1 cup canned tomatoes
- 2 tbsps extra virgin olive oil
- 1 onion (medium)
- as needed parsley
- 1 pinch pepper
- 1 tsp dried oregano
- salt (add only if needed)

Preparation of Flavorful Cod in Sauce
First, cut the cod into pieces not too large and soak it for at least 3-4 days, changing the water at least once a day and storing it in the fridge.
Once the cod is well soaked and also desalinated, drain it in a colander for at least half an hour to remove as much water as possible.
Take a high-sided non-stick pan, add 2 tablespoons of extra virgin olive oil, chop an onion, and let it fry until golden.
Add the tomatoes passed through a strainer, season with pepper, a little chopped parsley, oregano, mix, and add the cod pieces.
Let it cook covered, checking the cooking and stirring occasionally.
The cooking time will be about 30 minutes total.
Towards the end of cooking, taste and only then consider if you need to add salt.
Serve hot and plate.
