Making fresh pasta in the bread machine was something I had yet to try with my Croustina Panasonic.
I knew it would turn out really well, but I was worried about the texture.
Just to be sure, I made a slightly softer dough, as I wanted it to be worked well enough. After the kneading, I added a bit more flour on the work surface to achieve the right consistency, and the dough was perfect.
As a true Abruzzese, I like my pasta “ignorant,” meaning a bit thick and with a nice texture. I assure you that when you add your sauce, it will be truly exceptional.
I made a dough with 12 eggs because it was near the Christmas holidays and I needed a lot, but you can certainly make less.
With other bread machines, you can do the same dough; just choose the dough program, and you’re all set!

- 12 eggs (medium)
- 28.22 oz all-purpose flour
- 14.11 oz semolina flour
- 1/2 tablespoon extra virgin olive oil
- 1/2 teaspoon salt

Preparation of Fresh Pasta with Bread Machine
Take the bread machine’s basket, insert the kneading blade, add 14.11 oz of semolina flour, 24.69 oz of all-purpose flour (the remaining will be used for working on the surface), the eggs, salt, and oil.
Place the basket in the machine, select the dough program (on mine, button 17), start the machine and let it work for 20-25 minutes.
Once done, transfer the dough onto a floured work surface (we’ll use the remaining flour) and knead the dough until you get a nice, smooth, and firm dough, but not hard.
Once the dough is ready, we’ll make the sheets with the pasta machine and cut them as needed.
I made sheets for cannelloni and fettuccine.
