Hunter-style Rabbit

The rabbit hunter-style is one of those dishes that I unfortunately don’t prepare very often because my daughter doesn’t eat it.
My husband and I like it a lot, but unfortunately, we have to wait until our daughter is not around to enjoy it.
This type of meat is an excellent alternative to chicken and definitely, in my opinion, a better meat.
Just a few ingredients are needed, and the total cost of the dish is quite low, not to mention the calories, which are also quite contained.

Ingredients for making Hunter-style Rabbit

  • 1 Rabbit cut into pieces, about 2.2 lbs
  • 2 cloves Garlic
  • to taste Whole Peppercorns
  • 1 Package of oven-dried black olives
  • to taste Salt
  • 2 tablespoons Terralcantara extra virgin olive oil

Preparation of Hunter-style Rabbit

Take the rabbit pieces, wash them under running water, drain, and place them in a bowl. Cover them with white wine and let them rest for at least 1 hour in the fridge.

  • When it’s time to cook the rabbit, drain it (saving a cup of liquid, which might be needed during cooking) and transfer it to a high-edged pan. Add the garlic cloves, salt, whole peppercorns, oven-dried black olives, the extra virgin olive oil, and mix well so that all the ingredients incorporate.

  • Turn on the gas over medium heat and cook covered for at least 40-45 minutes, stirring occasionally.

    Add the saved liquid if it dries out too much!!!

  • When almost done, remove the lid and let it brown slightly.

    Plate and serve.
