Light Breaded Zucchini baked in the oven, is a super quick and super simple recipe, especially a great solution for a side dish for our dinner.
Zucchini made this way are really tasty in my opinion and alternatively, you can also opt to use round zucchinis, so the slices will be a bit bigger.
The breading is really a small touch but it makes them very tasty, generally, especially children who do not eat vegetables very willingly, with the breading in this way, will like them more.
Personally, I really like adding breadcrumbs to recipes, sometimes to make them crunchy or to give them that extra hint of flavor.
I recommend only cutting them all to the same thickness, otherwise, some will burn during cooking and others will still be semi-cooked.

- 3 zucchinis (about 1 lb)
- 1/2 cup breadcrumbs
- 1 tbsp extra virgin olive oil

Wash the zucchinis well, cut them into not too thin slices with the help of a mandoline, place them in a colander with a bowl underneath, sprinkle a pinch of salt, then mix them and leave them for about 1 hour, stirring occasionally if desired.

coat them in breadcrumbs, place them on a greased baking tray, sprinkle with a little salt and a drizzle of oil.
Bake at 400°F for about 25-30 minutes, they will be ready when we see them golden on the surface.
