Madeleines are the symbol of French cuisine, close your eyes and imagine the scent of butter, vanilla, and lemon filling the air: they are madeleines, freshly baked.
Simple, elegant, with that shell shape that contains all the sweetness of childhood.
Their story begins in Commercy, in Lorraine, where a young cook named Madeleine won over a King with these soft and golden sweets.
Since then, they have become an icon of French pastry, a symbol of home, memory, and genuine taste.
Perfect with tea, coffee, or on their own, madeleines remind us that simplicity, when done right, stands on its own.
There are desserts that need no grand introduction, because they speak for themselves the moment they are out of the oven, and madeleines are one of them.
They are really good, I recommend buying the mold and making them yourself…one leads to another!
So just replicate the recipe and if you make them, feel free to send me your photos, I will post them on my FB page with your name!

Preparation for Making Madeleines
Melt the butter in a pan over low heat and set aside.
Beat the eggs with the sugar in a mixer for at least 10 minutes.
Add the grated lemon, gradually mix in the flour, baking powder, milk, and melted butter, stirring well.
Butter the madeleine molds and pour the batter halfway up the mold’s depth…I filled them more for plumper madeleines.
Bake in a preheated oven at 392°F for about 10 minutes. Once baked, let them cool and dust with powdered sugar.
