Mandarin Honey Cantucci

The mandarin honey cantucci is a recipe I wanted to make with this special honey that I had never tasted before.
The Terralcantara company provided me with the mandarin honey and I was looking for a way to use it in my recipes, then the idea of these cantucci and I must say they turned out well with a really great taste.

These mandarin honey cantucci bring with them that very atmosphere: crunchy, golden, and citrus-scented, they reinterpret a Tuscan classic with a touch of Mediterranean sweetness.
Perfect for dipping in vin santo or enjoying with a cup of tea on autumn afternoons.
My cookies, for personal taste, are slightly tanned, but you can adjust according to your taste.

Ingredients to make mandarin honey cantucci

  • 4 Eggs
  • 4.6 oz Mandarin honey (or another of your choice)
  • 2 tablespoons Sugar
  • 4.2 oz Dry almonds with skin
  • 3.5 cups All-purpose flour
  • 1 packet Baking powder

Preparation of mandarin honey cantucci

  • Knead the eggs with the honey, add the flour, baking powder, almonds and mix everything well to form a dough.

    Create 2 rolls, place them on a baking sheet lined with parchment paper, flatten them a bit and bake in a preheated oven at 392°F for about 15 minutes, checking the baking.

    When the rolls appear cooked and a bit tanned, remove them from the oven and cut them into slices, place them with the cut side on the baking sheet, bake them again for 4-5 minutes, then turn the cookies and bake for another 4-5 minutes.
