Marinated Tomatoes

The marinated tomatoes recipe is a long-standing side dish that I plan to make every year, but I don’t always manage due to the fact that marination requires a few hours, but I recommend trying them at least once… they are too good!!!
As you can see from the photo, the tomatoes aren’t perfect, and before marinating, I had to remove some unattractive parts, but they are my homegrown tomatoes, and like all local products, they may not be beautiful, but they are top-notch in flavor!!!
A simple side dish with a truly unique taste that will win over everyone at the table.
The marination takes 4 hours, so you need to prepare them in advance to have them ready for lunch or dinner.

Ingredients to make Marinated Tomatoes

  • 4-5 ripe salad tomatoes
  • 1 glass white wine vinegar
  • 1 1/2 glass extra virgin olive oil
  • to taste salt
  • whole black peppercorns
  • 1 small onion
  • to taste parsley, bay leaf, oregano, and mint
  • basil for garnish

Preparation of Marinated Tomatoes

  • Wash the tomatoes, dry them, cut off the end where the stem usually is, and any damaged or unattractive parts.

    In a bowl, prepare the marinade with vinegar, extra virgin olive oil, salt, a few peppercorns, a peeled and coarsely chopped onion, and finely chopped dry or fresh herbs.

    Immerse the tomatoes in the marinade cut-side down and place them in the refrigerator for 4-5 hours.

  • Take a baking dish, slice the tomatoes, and place them in it. Use a spoon to scoop the herbs from the marinade and sprinkle them on the tomatoes. Adjust with salt and extra virgin olive oil, then make a second layer with herbs, salt, extra virgin olive oil, and basil leaves for garnish.

  • Place in the fridge and leave for at least another 10 minutes before serving.
