Ingredients for making Mini Durum Wheat Ciabattas

  • 1 1/2 cups Water
  • 1 sachet Dry yeast
  • 2 tbsps Extra virgin olive oil
  • 1 1/3 cups Durum wheat flour
  • 1/3 cup All-purpose flour
  • 2 tsps Salt

Preparation of Mini Durum Wheat Ciabattas

  • Let’s start by preparing the dough with the mixer or by hand by putting the water, yeast, and letting it dissolve, then adding the durum wheat flour, salt, and EVO oil, mixing well and working for a few minutes.

    Finally, add the all-purpose flour and work until a well-mixed dough is obtained, then transfer the dough into a large bowl and let it rise in a warm place for about 4-5 hours.

    After the rising time, transfer it to a work surface and cut into 75 g ciabattas, place them on a baking sheet with parchment paper, flatten them slightly, and create small incisions on the surface with a knife blade.

  • Let rise again until doubled and at least for 3 hours.

    Once risen, bake in a hot oven at 428°F (220°C) for about 15-20 minutes.
