Oven-Baked Gratinated Vegetables

Oven-baked gratinated vegetables are a very tasty side dish, but at the same time an excellent solution to make our children eat vegetables.
In general, children are more inclined to eat vegetables when they see something on top, like some breadcrumbs that create a little crust, and then they are colorful!
It’s a very quick, low-calorie side dish and almost a fridge cleaner, just cut the vegetables, season them, bake them, and then cook in reasonable times!
I recommend trying my recipe and you will surely be satisfied.
I usually cut various types of vegetables into cubes in the summer when it’s in season and freeze them, when the time is right I can use them for different recipes.
Surely, making the recipe when the season gives us fresh vegetables is another thing.

Ingredients to make Oven-Baked Gratinated Vegetables

  • 2 Potatoes (medium)
  • 2 Zucchini (medium)
  • 1 Eggplant (medium)
  • 1 Onion (large)
  • 2 Carrots (medium)
  • 2 Bell Peppers (large)
  • 1/3 cup Breadcrumbs
  • to taste Salt
  • to taste Thyme
  • 3 tbsps Extra virgin olive oil

Preparation of Oven-Baked Gratinated Vegetables

  • First, get a baking tray that is at least 15 x 15 inches.
    Take all the vegetables, wash them, peel those that need peeling, such as carrots and potatoes, cut everything into cubes and put them in a large bowl.
    The bell peppers, of course, should be cut in half and cleaned of seeds.
    Season with extra virgin olive oil, salt, thyme, and mix well.
    Put everything in the baking tray, spread out all the vegetables, sprinkle with half of the required breadcrumbs and bake for about 40 minutes in a preheated oven at 392°F.

  • Towards the end of cooking, stir the vegetables and sprinkle with the remaining breadcrumbs and bake again until fully cooked.
