Ingredients for making the Pineapple Cake
- 3 eggs (medium)
- 5.3 oz sugar
- 5.3 oz all-purpose flour
- 2 tbsp sunflower oil
- 1 packet baking powder
- zest of 1 lemon
- 1 can of canned pineapple
- 3.5 oz sugar
- 2 tbsp water

Preparation of the Pineapple Cake
Take the mixer and start putting all the ingredients (except the pineapple) mixing everything well.
While it mixes, prepare a 9.5-10 inch baking pan and add 3.5 oz of sugar and 2 tablespoons of water to make the caramel (without greasing or flouring the pan), heat it on the stove and when it’s completely dissolved, remove from heat and swirl the liquid throughout the pan so that it adheres to the edges and the bottom.
Wait 4-5 minutes for it to cool and solidify.
Now you can place the well-drained pineapple slices on the bottom of the pan so that they touch each other…..
….then take the mixture which will now be ready and pour it over the pineapple.
Bake at 350°F for 45 minutes.
Once cooked, let it cool, then remove it from the pan and flip it onto a serving dish; it will show the pineapple slices on top.
If you like, you can moisten the surface with the pineapple juice, or serve it as it is.
