Potato and Rosemary Flatbread

The potato and rosemary flatbread is a simple preparation, especially if made in the bread machine, as I did, making it even simpler, without too much effort.
I made the flatbread in my Panasonic Croustina bread machine, doing everything in the machine, from kneading to resting, to baking.
I used two programs, one for kneading and the other for baking, but in my machine, like in other bread machines, there are programs that manage everything, from kneading to baking.
Of course, you can make the recipe by kneading by hand or with a stand mixer, forming a long loaf, waiting for the dough to rise, and then baking it in the oven.
However you decide to make the recipe, it will surely be a success!

Ingredients for Potato and Rosemary Flatbread

  • 25 oz all-purpose flour
  • 5 g fresh yeast
  • 25 g salt
  • 1 tbsp rosemary
  • 14 oz potatoes (weight raw)
  • 2/3 cup whole milk
  • 1/3 cup peanut oil (or sunflower oil)
  • coarse salt
  • 1/2 tbsp extra virgin olive oil

Preparation of Potato and Rosemary Flatbread

  • First, boil the potatoes, peeled and cut into pieces. Once cooked, mash them with a potato masher and let them cool slightly.
    Take the bread machine pan, insert the kneading blade, pour in all the dry ingredients, followed by the liquid ingredients, including the cooled potatoes.
    Insert the pan into the machine, program kneading to button 17, in mine it lasts 45 minutes, but you can stop it after 20 minutes.
    Pour the dough onto a work surface, fold it to form a ball, remove the kneading blade from the pan, and put the dough back into the pan.
    Let the dough rise for about 2 hours with the machine off.
    Once risen and roughly reaching the rim of the pan, brush the surface with extra virgin olive oil, sprinkle with coarse salt, and set the machine for baking only, for my machine it’s button 13, program for 1 hour of baking and start.

  • Now the machine will do everything by itself.
    Once baking is complete, remove the pan from the machine, let it cool a bit, then remove the bread from the pan and place it on a wooden board or a wire rack to cool completely.
