The pumpkin bread with a bread machine was born as a quick idea to use up some pumpkin I had already pureed and frozen… but I need to empty the freezer a bit to clean it, so…
I measured all the ingredients even though I put them in by eye without thinking too much, but I noted everything down, even if I didn’t believe it would turn out so exceptionally well to propose to you.
It turned out to be a delicious loaf of bread, super soft, and also suitable for making bruschetta… try it to believe it! I put all the ingredients in and started the machine that worked the dough for me… after 40 minutes of kneading, I took it out and shaped it into a loaf that, when cooked, was truly exceptional.

Ingredients for making Pumpkin Bread with Bread Machine
- 1 3/4 cups Pumpkin pureed
- 0.7 oz Fresh yeast
- 2/3 cup Warm water
- 2 tsp Heaping salt
- 5 1/2 cups All-purpose flour + 2 tbsp for the work surface
- 1 tbsp Re-milled durum wheat semolina
Preparation of Pumpkin Bread with Bread Machine
If you don’t already have pumpkin pureed, cut the pumpkin into slices, removing the skin, place it on a baking sheet lined with parchment paper, and let it dehydrate at 300°F for at least 30 minutes or until it becomes soft.
Once cooked, put it in an immersion blender and puree it.
In the bread machine’s basket, place the pumpkin puree, fresh yeast, water, and flour, insert the basket into the machine, and set it to a dough-only program, for my Panasonic machine it’s program 28 which lasts 40 minutes.
Start the machine, as soon as it starts kneading, add the salt and let it work.
Once it has finished kneading, pour the dough onto a floured work surface
and work it just enough to blend well, then shape it into a loaf of bread.
Place it on a baking sheet lined with parchment paper, dust it with semolina, then make diagonal cuts and let it rise for at least 2 hours.
Once risen, bake in a preheated oven at 430°F for about 20-25 minutes.
Let it cool before slicing.
Of course, you can also make this bread by kneading everything by hand or with a stand mixer and you will still get a delicious bread.
