Quick and Tasty Mini Pizzas

The quick and tasty mini pizzas are just as the title says…quick and easy to make and…..very good!
They need to rise, but it’s not too long, and you can prepare them as a bread substitute or as a snack for both young and old!
They remain slightly crunchy on the surface and very soft inside; I made them as a bread substitute, also very quickly, and the result was very well appreciated.
My husband used them even as a sandwich, folding them in half and filling them.

Ingredients for Making Quick and Tasty Mini Pizzas

  • 3 1/4 cups all-purpose flour + some more for the work surface
  • 2 tsp fresh yeast
  • 1 cup water
  • 1/4 cup lard
  • 1 tsp sugar
  • 1 tsp 1/2 of salt
  • as needed extra virgin olive oil (for brushing on)
  • as needed salt

Preparation of Quick and Tasty Mini Pizzas

  • In a bowl or in the stand mixer, combine 1 cup of warm water with 1 teaspoon of sugar, then add the yeast and let it dissolve.

    Add the flour, melted lard and mix well, add the salt and continue working the dough for a few minutes until you get a smooth and homogeneous mixture.

    Transfer the dough into a bowl and let it rise for at least 1 hour or until it doubles.

    Once risen, transfer the dough to a floured work surface and form it into a ball again

  • divide the dough into 7 equal parts, each weighing about 110-112 grams, and form discs about 1/4 inch thick.

    Place them on oiled baking sheets (if you place baking parchment, oil it and then place the mini pizzas) and brush the pizzas with extra virgin olive oil, sprinkle with a little salt, and let rest for another 30 minutes or so.

  • Bake in a preheated oven at 482°F (250°C) for about 10 minutes.
