Quick Pumpkin Pancakes

Quick pumpkin pancakes are really tasty and super delicious…try to believe it!!!
A really quick recipe, I used pumpkin puree because it was leftover from another recipe, but if you want to speed up the recipe, you can simply grate the pumpkin raw by removing the skin.
Surely a useful solution to bring to the table in no time.
I often create recipes by grating vegetables and other raw ingredients, then turning them into meatballs, pancakes, etc.
All dough heaps are created on a baking sheet, flattened, and into the oven they go, a few minutes and they are done!
The indicated flour refers to the recipe with pumpkin puree, but if you grate the pumpkin, you will need less, so in that case, add it a little at a time.

Ingredients to make the Quick Pumpkin Pancakes

  • 8.8 oz pumpkin puree (raw about 1.3 lbs to obtain 8.8 oz of puree)
  • 9.2 oz potatoes (weight without skin)
  • 1.1 cups all-purpose flour
  • 1 egg (medium)
  • 2 tsp rosemary (chopped)
  • 1 tbsp dried oregano
  • 2 tsp salt (scant)

Preparation of Quick Pumpkin Pancakes

  • If we want to use pumpkin puree, firstly cut the pumpkin into slices, remove the skin and seeds, and bake it in the oven at 356°F for about 20 minutes; cooking times may vary depending on the thickness of the pumpkin.
    If instead, we use raw pumpkin, grate 250 grams (about 8.8 oz) of pumpkin and place it in a bowl, then peel and wash a potato, grate it as well, combine the egg and spices, and mix well to incorporate all ingredients.

  • Finally, add the flour and mix until a firm but soft mixture is obtained.

  • Prepare the necessary baking trays to cook our pancakes, line them with parchment paper, then take spoonfuls of the mixture and place well-spaced heaps on the baking sheet, then flatten them with the back of a spoon until very thin.

  • Preheat the oven to 392°F and bake for 15 minutes.
    The result will be very crunchy, but if they are not thin enough, the result will be a little soft.
