The rustic spelt flour rolls are truly excellent and are definitely healthier thanks to the spelt flour.
The only downside to these types of recipes is the rising time, but I love watching my recipes rise, it gives me a sense of satisfaction. If the final result satisfies you, it was surely worth the wait.
The flavor of spelt is truly tasty, and despite being made with a rustic flour, this bread keeps well for a few days.
If you make any of my recipes, send me photos that I will publish on my page with your name.

Preparation of Rustic Spelt Flour Rolls
Let’s start preparing the rustic spelt flour rolls.
In a bowl, put the lukewarm water with the yeast, let it dissolve, then add the spelt flour, mixing well.
Next, add the salt and all-purpose flour, mixing and blending everything well until a homogeneous dough is formed.
Let it rise in a warm place for at least 3 hours and in any case until it doubles in volume.
Once risen, divide the dough into 8 parts and form balls.
Take a baking tray and cover it with parchment paper, place the balls of our rolls on it
…cross-cut them on the surface and let them rise for about 45 minutes, or until doubled once more.
The rising time will depend on whether the environment is warm, if there are drafts, etc…
Bake at 392°F for about 30 minutes, checking the baking.
