Shortbread cookies are really quick, and I generally use them for many recipes because they are easy to work with and don’t break.
I have made them in many different shapes, but of course, you can give them whatever shape and especially size you prefer, I often make them and sometimes big and sometimes small.

With the listed ingredients, you get a good quantity of cookies, and I have indicated the calories only for the total amount, but if we divide them by the number of cookies, they are not that many!!
These cookies can be kept for several days, and we can put them in a plastic bag or a tin container.

- 1/2 cup Peanut oil (or sunflower)
- 1 cup Sugar
- 1 packet Baking powder
- 1 packet Vanilla
- Grated zest (of 1/2 lemon)
- 500 g all-purpose flour (+ some for the work surface)
- 10 g Powdered sugar

Preparation of Shortbread Cookies
Start by preparing the dough by gradually combining all the ingredients and working everything with a hand mixer, being careful to dissolve the baking powder in a bit of milk before adding it to the rest of the ingredients.
Finish the dough on a work surface and knead for 2-3 minutes, finally forming a ball.
As a unit of measurement for the cup, I used a disposable plastic cup.
Roll out sheets of dough about 1/12 inch thick, then use cookie cutters to cut out cookies. If you don’t have cute cutters like mine, you can use a small round cutter, a glass, or cut them by hand into triangular, hexagonal shapes, etc.Place them on a baking tray lined with parchment paper and bake in a preheated oven at 350°F for about 10 minutes, checking the baking.
