Ingredients for Soft Rolls with a Secret Ingredient

  • 1 1/4 cups mozzarella brine (or whey)
  • 1 1/2 tsp fresh yeast
  • 2 1/2 tsp extra virgin olive oil
  • 1 tbsp salt
  • 4 1/4 cups type 0 flour

Preparation of Soft Rolls with a Secret Ingredient

  • In a bowl, place the mozzarella brine, then add the yeast and let it dissolve, add the oil and gradually the flour, mix well until it is all combined and obtain a soft but well-mixed dough.
    Let rise for about 2 hours covered in the bowl with kitchen wrap.

  • Once risen, pour the dough onto a floured work surface, recreate a ball and divide it into 7 equal parts, about 4.2 oz each, and with each piece of dough form elongated rolls, place them on a baking tray lined with parchment paper.
    Slash the rolls on top and let them rise for about another hour…..

  • ….then bake them in a preheated oven at 392°F for about 25 minutes, monitoring the cooking.
    Once cooked, wait for them to cool at least a bit before consuming.
